Genmaicha was originally considered the ‘people’s tea’. Rice was added as a filler to make the tea leaves go farther, thus reducing the price of the tea and making it more accessible. It is also sometimes called ‘popcorn tea’ because the roasting process can cause some rice to pop, resembling popcorn.
Made with traditional Sencha green tea makes this a grassy green tea. The tea is then rounded out by the addition of the rice that when toasted releases some of its starch and sugars to give the tea a warm, full flavor and smooth taste.
