Iron Goddess Of Mercy (Tie Guanyin)

Tie Guan Yin is another oolong with a flavor profile reminiscent of somewhere between a green and a black tea. For many people, Iron Goddess of Mercy is what they think of when they think of oolongs. 

The tea was roasted slowly over time to develop the full flavor of this large leaf variety of camellia sinensis. As a rolled tea, the leaves will unfurl and expand when steeped and therefore a little bit of goddess goes a long way. You only need about half the amount of tea that you would use for a typical cup of tea.
